Chilli Con Carne Spice Mix

I invented this recipe for chilli con carne spice mix because I love the fragrance of freshly ground spices. I make it in small batches, it only takes a few minutes, and of course when you grind your own spices and spice mixes with your Thermomix, they have much better flavour than buying them already ground.

My chilli con carne spice mix is perfect for any chilli, whether it’s ‘con carne’ (with meat), or vegetarian ‘sin carne’ (without meat). It’s also one of the magic ingredients in my spicy bean burgers recipe, making them tempting to everyone, whether they are vegetarian, vegan, or would usually choose a beef burger!

This recipe is quick and very easy. Here’s a thought… I love to put an attractive label on a jar of chilli con carne spice mix, tie the top with a cheery ribbon, and give it away as a small gift. This recipe is suitable for Thermomix TM6, TM5 and TM31.

Ingredients

  • 10-15 g dried red cayenne or Kashmiri chillies, to taste, see 1st tip
  • 40 g cumin seeds
  • 25 g coriander seeds
  • 30 g paprika powder (sweet paprika powder)
  • 1 tsp smoked paprika powder

Method

  1. Grind dried red cayenne chillies, cumin seeds, coriander seeds, paprika and smoked paprika 30 sec/speed 10, then leave lid on TM bowl for 5-10 minutes to allow spice dust to settle.
  2. Transfer to a small sterilised jar – see 2nd tip, and close with lid. Keeps well in a dark cupboard for up to 8 months.

Janie’s Tips

  1. This seasoning mix is mild if you use dried red cayenne chillies or dried red Kashmiri chillies. Other dried chillies may be hotter or milder, depending on variety. Use the larger weight of chillies if you prefer a more spicy kick – we always do!
  2. In step 2, I like to use a dry pastry brush to get all the spice mix out of the TM bowl.
